ChocoFlex Ganache Truffle Molds are made from Silicone. by Pavoni Italy
It allows the candy maker to deposit firm ganache, praline mixtures, fondant centers, gelees, etc. into these precisely formed “sphere-shaped” truffle molds.
Simply deposit mixture through the top holes using a pastry bag or depositor.
The mixture is then allowed to firm and easily removed by separating the two-piece white silicone mold. Proceed with chocolate enrobing and decorating.
Chocoflex molds can also be used in the oven, refrigerator and freezer as they resist temperatures from -100F to +525F degrees (– 40° C to +280° C).
