What is Le souchet or Chufa?
It is a plant Cyperus esculentus, and produces tubers (Chufa or tiger nut), it is cultivated in some Mediterranean regions.
Its dried and ground tubers are used to produce this excellent tasty milk substitute rich in fiber.
In addition to being allergen free, Tiger Nuts are also rich in fiber and vitamin E.
